Fish is a common source of purines in our diet. However, some types are higher in this substance than others. The highest amount with more than 300 mg of purines per gram can be found in anchovies and dried sardine. The concentrated amount is mostly attributed to the drying process. Other high purine types of fish include mackerel, herring, scallops, cold fish, tuna, perch, or trout. Keep in mind that canned or fresh salmon often have lower purine levels than other fish options.
