Organ meats are highly nutritious, but they are also high in cholesterol. Some common options include liver, kidney, and heart. In fact, the liver is the primary source of cholesterol in the body. It is the organ in which these waxy substances are made and stored. Therefore, consuming animal liver and other organs would increase the overall amount of cholesterol. It is advisable to consume no more than one or two portions of organ meats on a weekly basis to reduce the risk. [8]
