Non-starchy veggies such as cabbage, squash, cucumber, baby corn, bean sprouts, carrot, lettuce, spinach, and arugula are great for patients with diabetes. They are low in carbs and can help stabilize the levels of sugar in the blood. It is recommended to consume at least 3 to 5 servings of those veggies on a daily basis. 1 serving might be 1 cup of uncooked veggies or 0.5 cups of cooked veggies. You can easily add them to nearly all diets without worrying about any health issues. Raw and fresh veggies are often better than canned or frozen ones. Also, you can steam or roast them, but avoid adding salt or other spices. [11]
