7Sweet Potato Wedges and Stuffed Portobello Mushrooms
Ingredients of sweet potato wedges:
– 1 kilogram sweet potatoes cut into thick wedges
– 1 tablespoon smoked paprika
– ¼ can vegetable oil
– 1 tablespoon ground cumin
– 1 tablespoon lemon juice
– 2 tablespoons pesto
– Mayonnaise
– Black pepper
– Kosher salt
Instructions:
– Step 1: Season sweet potatoes with pepper, salt, cumin, paprika, and oil
– Step 2: Grill over high heat in 15 minutes
– Step 3: Mix lemon juice, pesto, mayonnaise, pepper, and salt in a bowl

– 2 teaspoons minced parsley
– 2 teaspoons soy sauce

– 4 portobello mushroom caps
– 1 crushed garlic clove
– Black pepper

– Olive oil
– ¼ cup mozzarella cheese
– 2/3 cup plum tomato
Instructions:
– Step 1: Mix together tomato, oil, cheese, pepper, rosemary, and garlic
– Step 2: Mix soy sauce, lemon juice, and oil in a small bowl and brush over mushroom caps
– Step 3: Grill mushroom caps over heat for 5 minutes each side
– Step 4: Add tomato mixture into mushroom cap and keep grilling for 3 minutes
