Nitrates are far more important to the circulatory function of the blood vessels than most other nutrients. An increase in Nitric Oxide (NO) production by the vessels’ endothelial lining would dilate the vessels to allow more blood to flow through them. Eating foods with high contents of these nitrates ensures a steady supply of NO to the blood vessels. The NO causes smooth muscles around the vessel to relax, which helps in vasodilation. Some foods with high nitrate content include cabbage, leafy veggies, beets, spinach, and celery.
